White WinesChardonnay & blends:
Chardonnay usually produces extremely rich wines. Expect the upfront flavours of peach, melon, nectarines and grapefruit with background flavours of cashew, fig and nectarine. Oak treatment will add toasty character whilst the unoaked variety has strong citrus flavours.
Semillon:A young Semillon tends to be fruit neutral and slightly acid. With bottle age it develops its real character of straw and gooseberries. Well-aged Semillon can show extraordinary complexity.
Sauvignon Blanc and Blends:Cool climate affects this delicate, fragrant grape in creating a herbaceous and asparagus character. Warmer seasons bring out the tropical fruit flavours of passionfruit and lychees.
White Varietals:
Red WinesCabernet Sauvignon:
Cabernet takes time to develop. The major flavour is dependent on the ripeness of the fruit. Flavours can range from dark cherry to ripe blackcurrants. Subtle back flavours can include green leaf, tobacco, cinnamon and nutmeg.
Shiraz:
This is a very honest grape variety, which, varies according to the region, and climate in which it is grown. Cool climate can show black pepper, capsicum and mint. Warm climate results in spirit and port aromas. The major flavour is like ripe plums and raspberries.
Red Wine, Blends and Varietals:
Pinot Noir:
This is a very sensitive grape variety. When it’s good it is very very good. It can produce wines of outstanding complexity and interesting examples can show flavours like truffles, earth, mint and mushrooms. The major flavour varies from wild strawberries to dark cherry with a hint of plums.
Merlot & Blends:
Usually cast, as a partner to cabernet but alone it can be a substantial wine with ripe, red currant flavour and a rose garden scented nose. With cabernet it adds flesh to the blend.
